This is a sorghum-based riff on an Australian classic, barley water. As a simple switch, the barley has been replaced by sorghum for a refreshing, grassy flavor that pairs nicely with the addition of lemon and honey.
Barley water is a simple and delicious beverage consumed the world over with incredible health benefits as well as interesting historical context. Primarily influenced by English tradition to consume barley water as a health beverage, it was brought to Australia during colonial times. It took off as a refreshing and nourishing drink for farmers and workers trying to stay hydrated and healthy in the hot arid outback.
From there, it stuck and became a fundamental drink across the entire nation made with simple ingredients that could be found in any person’s home or pantry.

Ingredients
- ½ cup whole grain sorghum, rinsed
- 4 cups water
- 2 lemons, both zest and juice
- 2 tablespoons honey, plus more to taste
- Ice, as needed, for serving
- Lemon slices, as needed, for garnish
Instructions
- Combine the sorghum and water, in a medium sauce pot over high heat. Bring to a boil, then reduce heat to low, cover and simmer for roughly 45 minutes or until the grains are tender.
- Strain the sorghum to use in other delicious recipes, reserving the cooking liquid in a heat proof pitcher.
- Cool the liquid for 10 minutes, then add the lemon zest, lemon juice and honey, stirring to combine. Taste and add more honey as needed.
- Chill the sorghum water in the refrigerator for at least 2 hours, then serve over ice with lemon slices.
