Crispy popped sorghum tossed in spicy sriracha butter with paprika and chili for a bold, crunchy snack.

Ingredients

  • 1/2 cup whole grain sorghum
  • 1 tbsp neutral-flavored oil
  • 2 tbsp unsalted butter
  • 1 to 1 1/2 tsp sriracha (adjust to taste)
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt to taste

Instructions

  1. Heat oil in a heavy-bottomed pot over medium-high heat. Add a few sorghum grains to the oil, take pot off the heat until sorghum grains pop Remove the popped pieces and return the pot to heat with remaining sorghum grains and cover with a lid. Shake the pot regularly to prevent burning. When there is more than 5 seconds between pops, remove the pot from the heat and transfer the popped sorghum to a large bowl.
  2. In a small saucepan, melt the butter over low heat. Stir in the sriracha, paprika, chili powder and a pinch of salt until combined.
  3. Pour the spicy butter mixture over the popped sorghum. Toss well to coat evenly. Taste and adjust seasoning if needed. Serve immediately or let it cool for extra crunch.
