- 6 oz chilled Champagne or dry sparkling wine
- Ice
- Fresh strawberry slices for garnish

- 1/2 cup fresh strawberries (hulled and sliced)
- 1/4 cup water
- 1/4 cup sorghum syrup

- In a small saucepan, combine strawberries, water, and sorghum syrup.
- Bring to a gentle simmer over medium heat and cook for 5-6 minutes, mashing berries slightly.
- Strain through a fine mesh sleeve, pressing to extract the liquid. Cool completely before using.
Main Recipe Instructions
- Fill a cocktail shaker with ice.
- Add gin, lemon juice, and strawberry sorghum syrup.
- Shake vigorously for 10-12 seconds until chilled.
- Strain into two chilled Champagne flutes or coupes.
- Top each with 3 oz sparkling wine.
- Garnish with a strawberry slice on the rim or a lemon twist.
