  • 6 oz chilled Champagne or dry sparkling wine
  • Ice

  • 1/2 cup fresh strawberries (hulled and sliced)
  • 1/4 cup water
  • 1/4 cup sorghum syrup

  1. In a small saucepan, combine strawberries, water, and sorghum syrup.
  2. Bring to a gentle simmer over medium heat and cook for 5-6 minutes, mashing berries slightly.
  3. Strain through a fine mesh sleeve, pressing to extract the liquid. Cool completely before using.

Main Recipe Instructions

  1. Fill a cocktail shaker with ice.
  2. Add gin, lemon juice, and strawberry sorghum syrup.
  3. Shake vigorously for 10-12 seconds until chilled.
  4. Strain into two chilled Champagne flutes or coupes.
  5. Top each with 3 oz sparkling wine.
  6. Garnish with a strawberry slice on the rim or a lemon twist.
