Tips & Tricks: This is a universal frying batter that can be used for anything from fish sticks to onion rings. Depending on capabilities or operation, water can be used instead of seltzer. Depending on the brand or product, the spices in the batter can also be adjusted accordingly. Whole grain sorghum flour lends itself well to this application as it retains its texture and nutty flavor without getting soggy.

Ingredients
- 600 grams Whole Grain Sorghum Flour
- 200 grams Corn Starch
- 7 grams Xanthan Gum
- 40 grams Baking Powder
- 20 grams Garlic Powder
- 10 grams Onion Powder
- 40 grams Paprika
- 15 grams Cayenne, optional
- 20 grams Salt
- 350 grams Seltzer
Instructions
- Preheat a deep fryer to 350°F.

Whisk together the sorghum flour, corn starch, xanthan gum, baking powder, garlic powder, onion powder, paprika, cayenne and salt.
- Add the seltzer to the dry mix and whisk together until smooth.
- Dip your preferred product or ingredient into the batter shaking lightly to remove any excess.
- Fry until golden-brown and crispy and internal temperature reaches USDA Minimum Internal Temperature.
