Sweet and salty no-bake bars with crunchy popped sorghum, peanut butter, syrup and rich dark chocolate.

  • 3 cups popped sorghum
  • 1 cup creamy peanut butter (room temperature)
  • 1/2 cup sorghum syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 7 oz dark chocolate, chopped

  1. Line an 8x8-inch pan with parchment paper.
  2. In a small pot warm up the sorghum syrup, vanilla and a pinch of salt. Stir until smooth.
  3. In a large bowl, combine peanut butter, sorghum syrup, vanilla and a pinch of salt. Stir until smooth.
  4. Add the popped sorghum and gently fold in until evenly coated.
  5. Transfer the mixture into the prepared pan and press down firmly into an even layer.
  6. Place chopped dark chocolate in a heatproof bowl and melt using a double boiler or microwave 20-seconds at a time, stirring between each until smooth.
  7. Pour melted chocolate over the sorghum-peanut layer and spread evenly with a spatula.
  8. Refrigerate for one hour or until the chocolate is set and the bars are firm.
  9. Lift out using parchment paper, cut into bars or squares, and enjoy. Store in the fridge in an airtight container.
