- 3 cups popped sorghum
- 1 cup creamy peanut butter (room temperature)
- 1/2 cup sorghum syrup
- 1 tsp vanilla extract
- Pinch of salt
- 7 oz dark chocolate, chopped

- Line an 8x8-inch pan with parchment paper.
- In a small pot warm up the sorghum syrup, vanilla and a pinch of salt. Stir until smooth.
- In a large bowl, combine peanut butter, sorghum syrup, vanilla and a pinch of salt. Stir until smooth.
- Add the popped sorghum and gently fold in until evenly coated.
- Transfer the mixture into the prepared pan and press down firmly into an even layer.
- Place chopped dark chocolate in a heatproof bowl and melt using a double boiler or microwave 20-seconds at a time, stirring between each until smooth.
- Pour melted chocolate over the sorghum-peanut layer and spread evenly with a spatula.
- Refrigerate for one hour or until the chocolate is set and the bars are firm.
- Lift out using parchment paper, cut into bars or squares, and enjoy. Store in the fridge in an airtight container.
