Buffalo chicken wrapped in soft, homemade sorghum tortillas with crisp lettuce and creamy dressing.

Ingredients

Tortilla Ingredients:

  • 1 cup pearled sorghum flour
  • 1⁄2 cup cornstarch
  • 1 tsp xanthan gum
  • 1⁄2 tsp salt
  • 2 tbsp olive oil (or melted butter/ghee)
  • 1⁄2 – 3⁄4 cup boiled water

Buffalo Chicken Filling Ingredients:

  • 2 chicken breasts (or thighs), diced
  • Salt and pepper, to taste
  • 1⁄2 tsp garlic powder
  • 1⁄2 tsp paprika
  • 1 tbsp lime juice
  • 1⁄3 cup buffalo sauce, plus extra for coating
  • 1 tbsp olive oil

Toppings:

  • Shredded lettuce (or cabbage)
  • Sliced green onions
  • Lime wedges
  • Blue cheese or ranch dressing

Instructions

Tortilla Instructions:

  1. In a mixing bowl, whisk together sorghum flour, cornstarch, xanthan gum and salt.
  2. Pour in the hot boiling water and olive oil. Mix with a spoon at first (dough will be hot), then knead lightly until smooth.
  3. Cover the dough with a towel or plastic wrap and let rest for 30 minutes.
  4. Divide into 6–8 balls. Roll out between parchment paper or on a lightly floured surface.
  5. Cook each tortilla on a hot skillet for 2-3 minutes per side until lightly browned and pliable.
  6. Keep warm wrapped in a clean towel until serving.

Buffalo Chicken Filling Instructions:

  1. In a medium bowl, add chicken season with salt, pepper, garlic powder, paprika, lime juice and buffalo sauce. Let it marinate for 15 minutes.
  2. Heat oil in a skillet over medium heat.
  3. Add chicken to skillet and cook until golden and fully cooked through, about 7–8 minutes.
  4. Toss cooked chicken in more buffalo sauce until coated.

Assembly Instructions:

  1. Place warm sorghum tortilla on a plate.
  2. Add shredded lettuce, buffalo chicken and drizzle with ranch or blue cheese.
  3. Sprinkle with green onions and serve with lime wedges.
