Sorghum Form

Ingredients

  • 300 grams Sorghum Flour
  • 300 grams Corn Flour
  • 700 grams warm Water, more as needed

Instructions

  1. Combine the flours in a large bowl.
  2. Add warm water to the flours and mix until a dough begins to form, adding more
    water as needed.
  3. Divide dough into 1 ounce portions, covering with a damp towel to keep the dough
    moist.
  4. Line a tortilla press with 2 sheets of plastic. Place each ball of dough between the
    plastic and press.
  5. Heat griddle on medium-high heat. Carefully peel tortilla off plastic. Cook each
    tortilla on each side, until lightly charred. Cover tortillas with a cloth or into tortilla
    warmer to keep them soft.
  6. These tortillas can be baked, fried, or served immediately.
