Soft, golden sorghum cinnamon rolls with a sweet cinnamon-sugar swirl and creamy vanilla frosting.

Ingredients
Cinnamon Rolls Ingredients:
3 cups pearled sorghum flour
1 ½ cups cornstarch
1 tbsp xanthan gum
⅓ cup granulated sugar
2 ¼ teaspoons instant yeast (1 packet)
1 teaspoons salt
1 teaspoon baking powder
1 ¼ cups warm (105-115°F) water
1 cup warm (100-110°F) whole milk
2 large eggs, room temperature
6 tablespoons butter, melted
1 cup brown sugar
2 tablespoons cinnamon
8 tablespoons butter, melted
Cream Cheese Frosting:
8 ounces cream cheese, softened
4 tablespoons butter, softened
1 ⅓ cups powdered sugar
2 teaspoons vanilla extract
Instructions
Cinnamon Rolls Instructions:
In the bowl of a stand mixer fitted with the paddle attachment, add the sorghum fl our, cornstarch, xanthan gum, granulated sugar, instant yeast, salt and baking powder. Mix until evenly combined.
With the mixer running on low, slowly add the water, milk, eggs and melted butter.
Turn the speed up to medium and mix for 3 minutes, until very smooth. The dough will resemble thick cookie dough.
Cover the bowl tightly with plastic wrap and refrigerate for 20 minutes (this makes the dough easier to roll out).
In a small bowl, mix together the brown sugar and cinnamon.
Lightly grease a 9” pie dish with butter or cooking spray.
Turn out the chilled dough onto a lightly floured surface and shape it into a ball. Sprinkle with a little fl our, then roll the dough out into a 15×15-inch square.
Spread the melted butter for the filling evenly over the dough. Sprinkle the cinnamon-sugar mixture all over.
Using a pizza cutter, cut the square into 2” strips.
Roll each dough strip up into a cinnamon roll. Place the rolls in the prepared pie dish.
Cover the pan with plastic wrap or a clean kitchen towel. Place in a warm spot and let rise for 45–60 minutes, until doubled in size.
While the dough is rising, preheat oven to 350°F. Bake for 30 minutes, or until the rolls are lightly golden brown.
Let the rolls cool for 15 minutes, until just slightly warm to the touch.
Cream Cheese Frosting Instructions:
In a large bowl with a hand mixer or stand mixer fitted with paddle or whisk, beat the cream cheese on high speed until smooth and creamy.
Add the butter and beat until combined.
Beat in the powdered sugar and vanilla until smooth.
Spread the frosting over the warm rolls. Serve immediately and enjoy!
