These Sorghum Fried Onions are a great topping for burgers, pizzas, salads or anything that can use a little crunch.

Ingredients
1 medium onion, thinly sliced
1 cup buttermilk
2/3 cup whole grain sorghum flour
2 tablespoons cornstarch
½ teaspoon salt
¼ teaspoon black pepper
vegetable oil, as needed
Instructions
Soak onions in buttermilk for 10 minutes.
Combine the sorghum flour, corn starch, salt and pepper in a shallow pan and whisk together.
In a large pan heat 1-inch of vegetable oil to 375°F
Strain the onions from the buttermilk, then toss in flour until well coated, shaking off excess flour, and add to oil. Fry in batches until golden brown, then remove from oil with a slotted spoon and drain on a paper towel-lined plate.
Allow to cool to room temperature.
Use as a crunchy garnish on your favorite recipes.
