A refreshing salad with the perfect balance of sweet, tangy and savory flavors, over hearty whole grain sorghum.

Ingredients

  • 2 cups cooked whole grain sorghum
  • 2 ripe peaches, pitted and sliced
  • 4 roma tomatoes, cut into wedges
  • 1/4 small red onion, thinly sliced
  • 1/4 cup fresh basil, chiffonade (thinly sliced)
  • 2 tablespoons olive oil
  • 1 tablespoon white balsamic vinegar
  • 1/4 cup crumbled feta cheese (plus more for garnish)
  • Pinch of crushed red pepper flakes
  • Salt and freshly cracked black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the cooked sorghum, sliced peaches, tomatoes, red onion and basil.
  2. Drizzle with olive oil and vinegar. Gently toss to combine.
  3. Add feta cheese and a pinch of chili flakes. Toss again lightly.
  4. Season with salt and black pepper to taste.
  5. Top with extra feta and a few more chili flakes if desired.
  6. Serve immediately or refrigerate for a make-ahead dish.
