Ingredients

Caviar Ingredients:

  • 2 cups cooked whole grain sorghum
  • 7 Roma tomatoes, chopped
  • 1 (15-oz) can corn, drained
  • 1 (15-oz) can no-salt-added black beans, drained and rinsed
  • 1 cup red onion, diced
  • 1 ½ cups green bell pepper, diced
  • 1 ½ cups red bell pepper, diced

Dressing Ingredients:

  • ½ cup vinegar
  • ⅓ cup oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder

Instructions

  1. In a small bowl, mix together all of the dressing ingredients and set aside.
  2. Mix together the cooked whole grain sorghum, tomatoes, corn, black beans, red onion, green pepper and red pepper.
  3. Pour dressing over sorghum mixture and stir until well combined. Refrigerate and serve cold.
